  • ·1 cube chicken stock
  • ·3 cups water
  • ·1 tablespoon Tom Yum paste for mild or
  • 1-1/2 tbsp for hot
  • ·2 cloves garlic
  • ·4 sliced galangal
  • ·3 stalks of lemon grass, inner part, chopped
  • ·2 kaffir lime leaves
  • ·250 g of king prawn or 2 chicken breast fillets - cut into thin strips
  • ·125g fresh mushrooms, thinly sliced
  • ·1 tablespoon fish sauce, soy sauce, oyster sauce
  • ·1 tablespoon fresh lime juice
  • ·1 teaspoon chopped fresh red chili as preferred
  • ·1 bunch fresh coriander, chopped
  • ·10 fresh basil leaves


  1. 1. In a large saucepan, bring the chicken stock with water to a boil. Stir in the Tom Yum paste and garlic and cook for about 2 minutes.
  2. 2. Add lemon grass, galangal and kaffir lime leaves let it boil.
  3. 3. Place the prawn in the saucepan and cook 5 minutes, or until cooked through.
  4. 3. Add mushrooms, fish sauce,oyster sauce, soy sauce, lime juice and red chili. Continue cooking until well blended.
  5. 4. Remove from heat and serve hot with the coriander and basil sprinkled on top.
